FOOD IN GENOVA AND LIGURIA...

 

These below are only a little example of some food that you can eat in Genova and Liguria.... Because there is much more...
And as I said it is really difficult to find these kinds of food in another part of Italy....
Because every Country in Italy has got own tipical meals and food, with difficultly you can find them out of that Country..

 

Anyway... one of the most famous specialities of Liguria is PESTO (it' is a sauce made by basil).
This sauce was born here, and Pesto that you can find in other places is different because the plant of basil and the way in which grows (for wether, the ground and other) is different.

PASTA

Genova is in Italy, so here too, pasta is very important. Obviously, here, one of the most traditional dishes is PASTA AL PESTO... (Pasta with Pesto)

 

And usually you should eat Pesto with one of these three kinds of Pasta...

with Spaghetti...


with Trenette (more or less like spaghetti but flatter)...

and Troffie (the best): a kind of fresh pasta that looks like little worms.

 

 

but it's as much important LASAGNE with Pesto... (slices of pasta, with Pesto and Bechamel between one slice and another....)

 

 

Other kind of tipical Pasta from here are PANSOTTI AL SUGO DI NOCI (Pansotti with walnut sauce)... indescrivibable...

 


Or RAVIOLI with meat sauce (quite similar to Bolognese)



Or if you prefere it's full of kinds of MINESTRONE (Soupes with or without pesto, with vegetables, or meat, or fish, ecc...)

 


FOCACCIA

But something of very tipical in Liguria (maybe the most tipical) is FOCACCIA... It's like a pizza but only the pastry, made in a different way...

There is simple....
with onions...

 

or with a special cheese inside.... la FOCACCIA COL FORMAGGIO (arrghhh...)

 

Usually, you can't find the simple Focaccia (or with onions) in a restaurant (maybe somethime), but only at the bakerys (and it's full of these). And you can eat Focaccia when you want... Because it's always a good moment... In the morning, at lunch, in the afternoon, at dinner... and also at night... because some bakerys are open all the night and you can buy Focaccia, sweets and other at 3, 4 or 5 o'clock AM, when you are hungry, after a night out... And you can find it, warm, just token out of the oven...

 

FARINATA Another kind of Focaccia but different because, made with chickpeas flour, and very thin...

 

And then, lots of savoury cakes... One of the most common is TORTA PASQUALINA (Cake of Easter). I don't try ever to describe it...

 

 

FISHES

Fishes are very important in the cooking of Italy and also of my Country (it's all on the sea...). You can find all, cooked in all the manners...

And then you can find fish like starter, with pasta, with rice, alone, grilled, fried.....

PANDOLCE (Sweet bread, but obviusly it's not bread...)



 

BACI DI DAMA (Lady's Kisses, coockies...)
CANESTRELLI

LATTE FRITTO (Fried milk... but obviously it's not only milk...)
And other cookies made with a special pastry...

 

And then, here, Chestnuts and Mushrooms grow everywere, so it's full of dishes with these...

 

Besides along all the coast of Liguria it's full of Olives and Vines (Grapes).
They grow in this contest... kissed by the sun and embraced by the sea breath, in a mild climat, and in a natural way like 100 or more years ago...


For this, Liguria is one of the main producing countries in Italy of OLIVE OIL, with a delicate and fruity flavour...
This Oil from here isn't called only Olio d'oliva (Olive Oil) but Olio Ligure (Olive Oil from Ligura) because this type of plant grows only here, with the right water, and particular climate and ground that it needs...

 

And then Grapes... this means a very good quality of WINE. We produce white, red, rosè and dessert wine...

So now, think that all our food grows in this habitat, and you...
you can eat this food in places like these, maybe in a small restaurant in some towns on the sea, or maybe only on a meadow on the grass looking this landscape...
